Our Story
Born from fire, rooted in community
Where Fire Meets Flavor
El Fuego Kitchen opened its doors in 2022 on Capitol Hill with a simple promise: every dish cooked over live wood fire. No gas burners, no shortcuts. Just mesquite, oak, and the kind of patience that turns good food into something unforgettable.
Our menu draws from the rich traditions of Mexican cuisine, reinterpreted through the lens of the Pacific Northwest. We source from local farms, fishermen, and foragers whenever possible, because great fire-cooked food starts with great ingredients.
What began as a pop-up at Capitol Hill farmers markets grew into a permanent home on Broadway. The neighborhood embraced us from day one, and we have worked to earn that trust with every plate that leaves our kitchen.
Meet the Chef
Our executive chef brings over fifteen years of experience working with live fire, from the asadores of Oaxaca to the wood-burning kitchens of Portland and San Francisco. After falling in love with Seattle's food scene and its access to incredible local produce, the decision to plant roots in Capitol Hill was an easy one.
“Cooking over wood is the oldest technique in the world, and it is still the best. The fire adds something that no other heat source can. Every flame is different, every cook is unique. That is what makes it exciting.”
What We Stand For
Locally Sourced
We partner with Washington farms, ranches, and fisheries. Our produce travels miles, not time zones. Seasonal menus mean we cook what the land provides.
Scratch-Made
Every tortilla pressed in-house. Every salsa made from scratch. Every mole built from whole dried chiles. No shortcuts, no pre-made bases.
Community-Focused
Capitol Hill is our home. We host neighborhood events, support local artists, and believe a restaurant should be more than just a place to eat.
